Ennè – Bock

Un brewpub a completa gestione femminile.
Francesca e Laura sono le menti e le braccia di Doctor B Brewpub un brewpub toscano in quel di Livorno, la cui fondazione risale al 2019.
Le abbiamo conosciute in occasione di Birraio dell’anno 2021 e subito ci ha colpito la chiarezza delle loro idee nel brassare birra e la particolarità nella scelta in etichetta per ogni loro produzione: ogni birra ha un nome palindromo.
La Ennè è una bock da 5,2° alcolici, un’ottima interpretazione dello stile tedesco.
Un bel colore ramato sormontato da un cappello di schiuma color crema.
Naso e palato ritrovano tutti gli ingredienti della bassa fermentazione tedesca; miele, panificato, caramello, leggero floreale, una dolcezza di fondo mitigata dal leggero apporto di amaro del luppolo.
Una bella scoperta nel mondo brassicolo italiano e non mancheremo di parlare ancora di loro, abbiamo infatti altre birre da stappare e degustare.

A fully female-run brewpub. Francesca and Laura are the minds and arms of Doctor B a Tuscan brewpub in Livorno, whose foundation dates back to 2019. We met them at the Brewer of the year 2021 and we were immediately struck by the clarity of their ideas in brewing beer and the particularity in the choice on the label for each of their production: each beer has a palindrome name. Ennè is a 5.2 ° alcohol bock, an excellent interpretation of the German style. A beautiful coppery color topped with a cream-colored foam hat. Nose and palate find all the ingredients of the German bottom fermentation; honey, bread-making, caramel, light floral, a background sweetness mitigated by the slight bitterness of the hops. A nice discovery in the Italian brewing world and we will not fail to talk about them again, in fact we have other beers to uncork and taste.
